In early 2007 while digging the foundation for the kitchen at Camp Cabarita we unearthed a number of iron implements and tools. After speaking with Community elders we learned that several generations ago there was a Jamaican owned wet sugar production operation on the property. Wet sugar is a by product of sugar rich in minerals, similar to molasses but with higher sugar content. Wet sugar is less refined than cane or brown sugar. We are still searching for photos or schematics of operational wet sugar equipment – any help or resources are appreciated.
